Objectives

  • On completion, successful students will able to:• Understand the purpose of a Food Safety management system, of Food Safety management systems standards, of management system audit and of third-party certification.• Understand the role and responsibilities and acquire the skills of an auditor to plan, conduct, report and follow-up an environmental management system audit in accordance with ISO 19011 and ISO 22003 including ISO 17021.

• Understand food Safety management system principles, processes and techniques used for assessment and management of food safety hazards.• Determine contents & requirements of ISO 22000 and inter-relationships with other relevant international standards and food industry practices and guides.• Identify and maintain legislative and regulatory requirements.• Plan, conduct, report & follow-up food safety management systems audits.
