Description/Outcomes This course aims to give clear ideas about harvesting and transportation of fish and seafood, assuring quality, safety and authenticity of fish and seafood to be processed. It covers the main topics concerning seafood spoilage, pre- and post- mortem handling. Also to give in details a significant idea about processing technologies including chilling and freezing of fish, heat processing of fish, irradiation of fish and seafood, Irradiation of fish and seafood, Preservation of fish by curing and drying and fermentation of fish. Finally, packaging and storing of fish and seafood products and waste management will be addressed.
